Crystal Paradise.

Finally...Belize. it's taken a while, to be honest, while researching the destination, not everything really pops out at me as "must blog now", so I have been picky about what to blog. If anyone has been there, please shoot me a comment on something you'd like to see!
 
I try to post about the more unique venue's that will hopefully leave you with an awesome experience, or a really big yearning to hit that place up, maybe throw a party, get married, what ever floats your boat.
 
I came across Crystal Paradise Resort, and fell in love. I dig straw huts. I mean I love everything about it, minus the bugs that might get in there and burrow. However, back to Crystal Paradise, this beautiful Eco-friendly resort is located in the middle of the jungle, along the Macal River. It sounds far, but it is only a short distance into the main Cayo town.
 
Crystal Paradise actually boasts 6 different types of hand-made Cabana's. (Valley View Thatched Cabanas (houses 3), Deluxe Thatched Cabanas (houses 4), Garden View Lofts (houses 6), Regular Rooms (houses 4) and the Heliconia Cottage (houses 2)). Each Cabana has their own charm, however the Heliconia is definitely the one you want to stay at..its quite beautiful and it is fully air conditioned, which I'm pretty sure might be a big NEED in that hot, sweaty jungle.
 
Crystal Paradise also offers home cooked meals (served family style) on a daily basis. These meals are not free.

Red Ginger.

How many restaurants have you been to, where it says "Fresh Tropical Cuisine" on the top of the menu, c''mon now! How amazing is that. I am just into the beginnings of my research on Belize, and loving this place. It definitely needs to be visited by moi, within the next year.

While searching through some travel and guide sites, I came across the restaurant Red Ginger. Located in San Pedro at the Phoenix Resort, Red Ginger offers a variety of popular Caribbean dishes, as well as some local flavour. Nom Nom Nom. 

See some of their delicious options below....

 ~~Grilled Snook with a guava tamarind glaze and zesty mango salsa, served with coconut rice and grilled calabazitas

~~Honey-chipotle glazed braised beef short ribs with roasted garlic mashed potatoes and a vegetable medley
~~Crispy shrimp with a lime-habanero sauce served atop a green plantain toston with guacamole

Red Ginger, does offer the restaurant as a venue space. It's not the largest (60 people seated inside, with additional room on the patio) however, for a small wedding, corporate function or gathering it would a beautiful spot in some pretty beautiful scenery. They offer full banquet menus, and can make recommendations for what they don't offer (i.e. wedding cakes etc.) Just remember that this restaurant is located within a resort, thus there will be surrounding resort rules, in order to not impose on guests.

Belize Me.

Finally.... I have chosen a destination. I know it only took me like 5 months to do it all. Sorry for the wait. It's starting to get cooler / fall looking in Toronto, and I feel like it might be time for a bit of a vacation.

Obviously through my not so obvious title, I have chosen Belize.
